Chef Duskie Estes of Black Pig Meat Co. and Dave Budworth of Victorian Farmstead Meat Co. team up at Fresh Starts Chef Events to spotlight sustainably raised meat and the butcher’s art.

Their menu: Scottadito Lamb Chop from Fallon Hills Ranch with Pomegranate-Lacquered Eggplant and Bellwether Farms Lebne, Green Noodle Fazzoletti with Sheep Milk Ricotta and Whole Lamb Sugo, Goat Cheesecake with Glitter Cranberries and Red Wine Gastrique.

The chef, with husband John Stewart, raise free-range animals for “snout-to-tail” products, including bacon that media star Oprah Winfrey included in one of her annual “favorite things” lists.

Dave Budworth, aka Dave the Butcher, is a longtime educator and expert in the meat world. He appeared as a judge on “The Butcher,” a History Channel series, and currently can be found carving prime meats with one of the North Bay’s top-rated purveyors.
