Hands-On Class: Making Sausage with Dave the Butcher

Learn to make your own sausage with David Budworth, the Bay Area’s celebrity butcher, in a special hands-on class that lets you create handmade sausages to share. The presenter, known as Dave the Butcher, has 36 years of experience in choosing and mixing ingredients for artisan sausages. He will lead guests in making both lamb and pork crepinettes, a traditional French sausage hand-wrapped in pork caul fat. The class also will try making two premixed sausages with a sausage-stuffing machine.

About the Instructor: David Budworth is a longtime educator and much-appreciated custom butcher who has served clients for leading purveyors like Marina Meats and Victorian Farmstead Meat Co. He has appeared at Oakland’s Eat Real festival and other events.
