Chef Event: Demonstration and Dinner with Dave the Butcher

Dave the Butcher, a longtime educator and master meat-cutter, presents a demonstration of the butcher’s craft paired with a menu that showcases lamb. At the end, his custom cuts of prime lamb will be awarded to raffle winners! The menu:

  • Shaved Brussels Sprouts “Lyonnaise”
    Lamb bacon and Dijon vinaigrette, poached quail’s egg
  • Roast Leg of Lamb
    Garlic, anchovy, rosemary, white wine jus, saffron rutabaga purée, grilled baby broccoli
  • Pistachio Chiffon Cake
    Lemon curd, toasted meringue

Also known as David Budworth, this butcher became a customer favorite after his start in 1989 with San Francisco’s Ashbury Market and later at Marina Meats. He also has served customers at Victorian Farmstead Meat Co. in Sebastopol and partners today with chefs to fulfill specialty needs.

Dave served as a judge on “The Butcher,” which aired on The History Channel, and has appeared at Eat Real Fest in Oakland plus other events.
